Steps
- In a bowl, mix the coconut milk, minced garlic, coriander roots, soy sauce, palm sugar, lime juice, and black pepper to create a marinade.
- Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).
- Preheat your grill or BBQ to medium-high heat.
- Remove the chicken from the marinade and grill for about 6-7 minutes on each side or until fully cooked and the internal temperature reaches 75°C (165°F).
- While the chicken is grilling, prepare the Som Tum salad by mixing shredded green papaya, shredded carrot, halved cherry tomatoes, and green beans in a large bowl.
- In a small bowl, whisk together the fish sauce and lime juice, then pour over the salad mixture. Toss well to combine.
- Serve the grilled chicken with the Som Tum salad, garnished with crushed peanuts and fresh cilantro. Accompany with lime wedges.
