- Lime juice - 1 tablespoon

- Fresh cilantro - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Vegetable oil - for grilling
Steps
- In a bowl, mix the Panaeng curry paste, coconut milk, brown sugar, fish sauce, lime juice, minced garlic, salt, and black pepper to create the marinade.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
- Preheat your grill or BBQ to medium-high heat and lightly oil the grates to prevent sticking.
- Remove the chicken from the marinade and let any excess marinade drip off. Reserve the marinade for basting.
