Ingredients

  • Panaeng curry paste - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Fish sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Fresh cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Vegetable oil - for grilling

Steps

  1. In a bowl, mix the Panaeng curry paste, coconut milk, brown sugar, fish sauce, lime juice, minced garlic, salt, and black pepper to create the marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat your grill or BBQ to medium-high heat and lightly oil the grates to prevent sticking.
  4. Remove the chicken from the marinade and let any excess marinade drip off. Reserve the marinade for basting.
  5. Grill the chicken thighs for about 5-7 minutes on each side, basting with the reserved marinade occasionally, until the internal temperature reaches 75°C (165°F) and the chicken is fully cooked.
