Ingredients

  • Chicken thighs - 400 grams
  • Garlic - 4 cloves, minced
  • Coriander root - 2 tablespoons, finely chopped
  • Soy sauce - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Lime juice - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Chili flakes - 1 teaspoon
  • Cilantro - 1/4 cup, chopped (for garnish)
  • Shallots - 2, thinly sliced
  • Lime - 1, cut into wedges (for serving)

Steps

  1. In a bowl, combine minced garlic, chopped coriander root, soy sauce, fish sauce, lime juice, brown sugar, black pepper, and chili flakes to create a marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes.
  3. Preheat a grill or BBQ to medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes on each side or until fully cooked and slightly charred.
  4. While the chicken is grilling, prepare the Nam Tok sauce by mixing together the remaining marinade with sliced shallots and additional lime juice in a small bowl.
  5. Once the chicken is cooked, let it rest for a few minutes before slicing it into bite-sized pieces.
  6. Serve the sliced chicken topped with the Nam Tok sauce and garnish with chopped cilantro and lime wedges on the side.
