  • Fish sauce - 1 tablespoon (for dipping sauce)
  • Palm sugar - 1 teaspoon (for dipping sauce)

Steps

  1. In a bowl, combine minced garlic, chopped coriander roots, soy sauce, fish sauce, lime juice, brown sugar, black pepper, and chili flakes to create a marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.
  3. Preheat a grill or BBQ to medium-high heat.
  4. Remove the chicken from the marinade and lightly brush with vegetable oil.
  5. Grill the chicken for 6-8 minutes on each side, or until fully cooked and juices run clear. Remove from heat and let rest for a few minutes.
