Ingredients

  • Chicken thighs - 400 grams

  • Soy sauce - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Palm sugar - 1 tablespoon
  • Lime juice - 2 tablespoons
  • Black pepper - 1 teaspoon
  • Vegetable oil - 1 tablespoon
  • Nam Pla (fish sauce dip) - 2 tablespoons
  • Chili flakes - 1 teaspoon
  • Fresh cilantro - for garnish

Steps

  1. In a bowl, combine minced garlic, chopped coriander roots, soy sauce, fish sauce, palm sugar, lime juice, black pepper, and vegetable oil to create the marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat the grill or BBQ to medium-high heat.
  4. Remove the chicken from the marinade and place it on the grill. Cook for about 6-8 minutes on each side or until fully cooked and the internal temperature reaches 75°C.
  5. While the chicken is grilling, prepare the Nam Pla dip by mixing the fish sauce with chili flakes in a small bowl.
  6. Once the chicken is done, let it rest for a few minutes before slicing.
  7. Serve the grilled chicken with the Nam Pla dip and garnish with fresh cilantro.
