- Fish sauce - 1 tablespoon
- Palm sugar - 1 tablespoon
- Lime juice - 2 tablespoons
- Black pepper - 1 teaspoon
- Vegetable oil - 1 tablespoon
- Nam Pla (fish sauce dip) - 2 tablespoons
- Chili flakes - 1 teaspoon
- Fresh cilantro - for garnish
Steps
- In a bowl, combine minced garlic, chopped coriander roots, soy sauce, fish sauce, palm sugar, lime juice, black pepper, and vegetable oil to create the marinade.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.
- Preheat the grill or BBQ to medium-high heat.
- Remove the chicken from the marinade and place it on the grill. Cook for about 6-8 minutes on each side or until fully cooked and the internal temperature reaches 75°C.
- While the chicken is grilling, prepare the Nam Pla dip by mixing the fish sauce with chili flakes in a small bowl.
- Once the chicken is done, let it rest for a few minutes before slicing.
- Serve the grilled chicken with the Nam Pla dip and garnish with fresh cilantro.
