- Garlic - 4 cloves, minced
- Coriander root - 2 teaspoons, minced
- Soy sauce - 2 tablespoons
- Fish sauce - 1 tablespoon
- Brown sugar - 1 tablespoon
- Lime juice - 1 tablespoon
- Black pepper - 1 teaspoon
- Vegetable oil - 1 tablespoon
- Chili flakes - 1 teaspoon (adjust to taste)
- Fresh coriander leaves - for garnish
Steps
- In a mixing bowl, combine minced garlic, coriander root, soy sauce, fish sauce, brown sugar, lime juice, black pepper, and vegetable oil to create the marinade.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
- Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and let any excess drip off.
- Grill the chicken for about 5-7 minutes on each side, or until fully cooked and the internal temperature reaches 75°C (165°F).
- While the chicken is grilling, prepare the dipping sauce by mixing chili flakes with lime juice and fish sauce to taste.
- Once the chicken is grilled, let it rest for a few minutes before slicing it into strips.
- Serve the grilled chicken warm, garnished with fresh coriander leaves, alongside the dipping sauce.
