  • Lime juice - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Vegetable oil - 1 tablespoon
  • Chili flakes - 1 teaspoon (adjust to taste)
  • Fresh coriander leaves - for garnish

Steps

  1. In a mixing bowl, combine minced garlic, coriander root, soy sauce, fish sauce, brown sugar, lime juice, black pepper, and vegetable oil to create the marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and let any excess drip off.
