Ingredients

  • Chicken thighs - 400 grams (boneless, skinless)
  • Garlic - 4 cloves (minced)
  • Coriander root - 2 tablespoons (finely chopped)
  • Lemongrass - 1 stalk (finely chopped)
  • Kaffir lime leaves - 3 leaves (finely sliced)
  • Fish sauce - 3 tablespoons
  • Soy sauce - 2 tablespoons
  • Palm sugar - 1 tablespoon
  • Turmeric powder - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Cilantro - 2 tablespoons (chopped for garnish)
  • Lime - 1 (cut into wedges for serving)

Steps

  1. In a large bowl, combine minced garlic, chopped coriander root, lemongrass, kaffir lime leaves, fish sauce, soy sauce, palm sugar, turmeric powder, and black pepper to create the marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, preferably 2 hours for enhanced flavor.
  3. Preheat your grill or BBQ to medium-high heat.
  4. Remove the chicken from the marinade and let any excess marinade drip off. Discard the leftover marinade.
  5. Grill the chicken thighs for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 75°C (165°F).
  6. Once cooked, remove the chicken from the grill and let it rest for 5 minutes.
  7. Slice the chicken and serve with lime wedges and a sprinkle of chopped cilantro.
