- Kaffir lime leaves - 3 leaves (finely sliced)
- Fish sauce - 3 tablespoons
- Soy sauce - 2 tablespoons
- Palm sugar - 1 tablespoon
- Turmeric powder - 1 teaspoon
- Black pepper - 1 teaspoon
- Cilantro - 2 tablespoons (chopped for garnish)
- Lime - 1 (cut into wedges for serving)
Steps
- In a large bowl, combine minced garlic, chopped coriander root, lemongrass, kaffir lime leaves, fish sauce, soy sauce, palm sugar, turmeric powder, and black pepper to create the marinade.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, preferably 2 hours for enhanced flavor.
- Preheat your grill or BBQ to medium-high heat.
- Remove the chicken from the marinade and let any excess marinade drip off. Discard the leftover marinade.
- Grill the chicken thighs for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 75°C (165°F).
- Once cooked, remove the chicken from the grill and let it rest for 5 minutes.
- Slice the chicken and serve with lime wedges and a sprinkle of chopped cilantro.
