- Coconut milk - 200 ml
- Khao Soi curry paste - 2 tablespoons
- Soy sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Brown sugar - 1 teaspoon
- Egg noodles - 150 grams
- Fresh cilantro - 10 grams
- Red onion - 1 small, thinly sliced
- Spring onions - 2, chopped
- Chili flakes - 1 teaspoon
- Salt - to taste
- Pepper - to taste
- Vegetable oil - for grilling
Steps
- In a bowl, mix soy sauce, lime juice, brown sugar, and half of the coconut milk to create a marinade for the chicken. Add the chicken thighs and marinate for at least 30 minutes.
- Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade, season with salt and pepper, and grill for about 6-7 minutes on each side or until fully cooked.
- Meanwhile, in a pot, bring water to a boil. Cook the egg noodles according to package instructions until al dente, then drain and set aside.
- In a separate pan, heat the remaining coconut milk over medium heat. Stir in the Khao Soi curry paste and simmer for 5 minutes to combine flavors.
- Add the cooked egg noodles to the curry sauce, mixing well to coat the noodles evenly.
- Serve the coconut curry noodles in bowls, topped with the grilled chicken, red onion, spring onions, cilantro, and chili flakes.
