Ingredients

  • Chicken thighs - 300 grams
  • Coconut milk - 200 ml
  • Khao Soi curry paste - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Brown sugar - 1 teaspoon
  • Egg noodles - 150 grams
  • Fresh cilantro - 10 grams
  • Red onion - 1 small, thinly sliced
  • Spring onions - 2, chopped
  • Chili flakes - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Vegetable oil - for grilling

Steps

  1. In a bowl, mix soy sauce, lime juice, brown sugar, and half of the coconut milk to create a marinade for the chicken. Add the chicken thighs and marinate for at least 30 minutes.
  2. Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade, season with salt and pepper, and grill for about 6-7 minutes on each side or until fully cooked.
  3. Meanwhile, in a pot, bring water to a boil. Cook the egg noodles according to package instructions until al dente, then drain and set aside.
  4. In a separate pan, heat the remaining coconut milk over medium heat. Stir in the Khao Soi curry paste and simmer for 5 minutes to combine flavors.
  5. Add the cooked egg noodles to the curry sauce, mixing well to coat the noodles evenly.
  6. Serve the coconut curry noodles in bowls, topped with the grilled chicken, red onion, spring onions, cilantro, and chili flakes.
