- Chicken thighs - 400 grams
- Soy sauce - 2 tablespoons
- Fish sauce - 1 tablespoon
- Oyster sauce - 1 tablespoon
- Garlic - 3 cloves, minced
- Lemongrass - 1 stalk, finely chopped
- Brown sugar - 1 tablespoon
- Black pepper - 1 teaspoon
- Vegetable oil - 1 tablespoon
- Jasmine rice - 200 grams
- Water - 400 ml
- Egg - 1, beaten
- Green onions - 2, sliced
- Cilantro - a handful, chopped
- Lime wedges - for serving
Steps
- In a bowl, combine soy sauce, fish sauce, oyster sauce, minced garlic, chopped lemongrass, brown sugar, and black pepper to create a marinade.
- Add the chicken thighs to the marinade, ensuring they are well-coated. Cover and marinate for at least 30 minutes in the refrigerator.
- While the chicken is marinating, rinse the jasmine rice under cold water until the water runs clear.
- In a medium saucepan, bring 400 ml of water to a boil. Add the rinsed rice, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed.
- After the rice is cooked, fluff it with a fork and set aside.
- Heat vegetable oil in a frying pan over medium heat. Add the beaten egg and scramble until cooked. Add the cooked rice to the pan and stir to combine.
- Add sliced green onions and chopped cilantro to the rice, mixing well. Keep warm.
- Preheat a grill or BBQ to medium-high heat. Grill the marinated chicken thighs for about 6-8 minutes on each side or until fully cooked and a nice char develops.
- Serve the grilled chicken over the fragrant rice, garnished with additional cilantro and lime wedges on the side.
