Ingredients

  • Chicken thighs - 400 grams
  • Soy sauce - 2 tablespoons
  • Fish sauce - 1 tablespoon
  • Oyster sauce - 1 tablespoon
  • Garlic - 3 cloves, minced
  • Lemongrass - 1 stalk, finely chopped
  • Brown sugar - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Vegetable oil - 1 tablespoon
  • Jasmine rice - 200 grams
  • Water - 400 ml
  • Egg - 1, beaten
  • Green onions - 2, sliced
  • Cilantro - a handful, chopped
  • Lime wedges - for serving

Steps

  1. In a bowl, combine soy sauce, fish sauce, oyster sauce, minced garlic, chopped lemongrass, brown sugar, and black pepper to create a marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well-coated. Cover and marinate for at least 30 minutes in the refrigerator.
  3. While the chicken is marinating, rinse the jasmine rice under cold water until the water runs clear.
  4. In a medium saucepan, bring 400 ml of water to a boil. Add the rinsed rice, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed.
  5. After the rice is cooked, fluff it with a fork and set aside.
  6. Heat vegetable oil in a frying pan over medium heat. Add the beaten egg and scramble until cooked. Add the cooked rice to the pan and stir to combine.
  7. Add sliced green onions and chopped cilantro to the rice, mixing well. Keep warm.
  8. Preheat a grill or BBQ to medium-high heat. Grill the marinated chicken thighs for about 6-8 minutes on each side or until fully cooked and a nice char develops.
  9. Serve the grilled chicken over the fragrant rice, garnished with additional cilantro and lime wedges on the side.
