Steps
- In a bowl, combine minced garlic, chopped cilantro stems, soy sauce, fish sauce, brown sugar, lime juice, and black pepper to create a marinade.
- Add the chicken thighs to the marinade, ensuring they are well-coated. Cover and let marinate in the refrigerator for at least 30 minutes.
- While the chicken is marinating, rinse the sticky rice under cold water until the water runs clear. Soak it in water for 4-6 hours or overnight.
- After soaking, drain the sticky rice and place it in a steamer basket lined with cheesecloth. Steam over boiling water for about 20-25 minutes until tender.
- Preheat the grill to medium-high heat. Grill the marinated chicken thighs for about 6-8 minutes per side or until fully cooked and slightly charred.
- While the chicken is grilling, mix the steamed sticky rice with coconut milk and a pinch of salt for added flavor.
- Once the chicken is cooked, remove it from the grill and let it rest for a few minutes before slicing.
- Serve the grilled chicken with sticky rice on the side, garnished with cucumber slices and lime wedges.
