  • Lime juice - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Sticky rice - 1 cup
  • Coconut milk - 50 ml
  • Salt - to taste
  • Cucumber - 1 small, sliced (for garnish)
  • Lime wedges - 2 (for serving)

Steps

  1. In a bowl, combine minced garlic, chopped cilantro stems, soy sauce, fish sauce, brown sugar, lime juice, and black pepper to create a marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well-coated. Cover and let marinate in the refrigerator for at least 30 minutes.
  3. While the chicken is marinating, rinse the sticky rice under cold water until the water runs clear. Soak it in water for 4-6 hours or overnight.
  4. After soaking, drain the sticky rice and place it in a steamer basket lined with cheesecloth. Steam over boiling water for about 20-25 minutes until tender.
  5. Preheat the grill to medium-high heat. Grill the marinated chicken thighs for about 6-8 minutes per side or until fully cooked and slightly charred.
  6. While the chicken is grilling, mix the steamed sticky rice with coconut milk and a pinch of salt for added flavor.
  7. Once the chicken is cooked, remove it from the grill and let it rest for a few minutes before slicing.
  8. Serve the grilled chicken with sticky rice on the side, garnished with cucumber slices and lime wedges.
