Ingredients

  • Chicken thighs - 400 grams

  • Lemongrass - 1 stalk, finely chopped
  • Fish sauce - 3 tablespoons
  • Soy sauce - 1 tablespoon
  • Brown sugar - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Vegetable oil - 1 tablespoon
  • Lime - 1, juiced

Steps

  1. In a large bowl, combine minced garlic, chopped coriander, lemongrass, fish sauce, soy sauce, brown sugar, black pepper, vegetable oil, and lime juice to create the marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes to allow the flavors to develop.
  3. Preheat your grill or barbecue to medium-high heat.
  4. Remove the chicken from the marinade and let excess marinade drip off. Discard the leftover marinade.
  5. Place the chicken thighs on the grill and cook for about 6-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.
  6. Once cooked, remove from the grill and let rest for a few minutes before slicing.
  7. Serve with fresh lime wedges and your choice of dipping sauce.
