- Brown sugar - 1 tablespoon
- Black pepper - 1 teaspoon
- Vegetable oil - 1 tablespoon
- Lime - 1, juiced
Steps
- In a large bowl, combine minced garlic, chopped coriander, lemongrass, fish sauce, soy sauce, brown sugar, black pepper, vegetable oil, and lime juice to create the marinade.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes to allow the flavors to develop.
- Preheat your grill or barbecue to medium-high heat.
- Remove the chicken from the marinade and let excess marinade drip off. Discard the leftover marinade.
- Place the chicken thighs on the grill and cook for about 6-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.
- Once cooked, remove from the grill and let rest for a few minutes before slicing.
