Ingredients

  • Chicken breast - 300 grams
  • Garlic - 3 cloves, minced
  • Cilantro - 30 grams, chopped
  • Lemongrass - 1 stalk, finely chopped
  • Fish sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Brown sugar - 1 tablespoon
  • Burger buns - 2 large
  • Cucumber - 1 small, sliced
  • Tomato - 1 medium, sliced
  • Red onion - 1 small, thinly sliced
  • Mayonnaise - 2 tablespoons
  • Sriracha sauce - 1 tablespoon
  • Olive oil - 1 tablespoon

Steps

  1. In a bowl, mix the minced garlic, chopped cilantro, finely chopped lemongrass, fish sauce, lime juice, and brown sugar to create the marinade.
  2. Add the chicken breasts to the marinade, ensuring they are well coated, and let them marinate for at least 15 minutes.
  3. Preheat a grill or grill pan over medium-high heat and brush with olive oil.
  4. Grill the marinated chicken for about 6-8 minutes on each side, or until fully cooked and no longer pink in the center.
  5. While the chicken is cooking, mix the mayonnaise and Sriracha sauce in a small bowl to create a spicy mayo.
  6. Toast the burger buns on the grill for 1-2 minutes until lightly golden.
  7. Assemble the burgers by placing a grilled chicken breast on the bottom half of each bun, topping it with cucumber slices, tomato slices, and red onion.
  8. Spread the spicy mayo on the top half of the bun and place it over the assembled burger.
  9. Serve immediately with a side of fresh salad or baked sweet potato fries.
