Ingredients

  • Chicken thighs - 400 grams, boneless and skinless
  • Garlic - 4 cloves, minced
  • Cilantro stems - 2 tablespoons, finely chopped
  • Thai bird's eye chili - 1, finely chopped (adjust to taste)
  • Fish sauce - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Brown sugar - 1 tablespoon
  • Lime juice - 2 tablespoons
  • Black pepper - 1 teaspoon
  • Vegetable oil - 1 tablespoon for grilling
  • Cucumber - 1, sliced for serving
  • Cabbage - 200 grams, shredded for side

Steps

  1. In a bowl, combine minced garlic, chopped cilantro stems, chopped bird's eye chili, fish sauce, soy sauce, brown sugar, lime juice, and black pepper to create the marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).
  3. Preheat a grill or grill pan over medium-high heat and lightly oil the grill grates.
  4. Remove the chicken from the marinade and discard the excess marinade. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 75°C.
  5. Once cooked, allow the chicken to rest for a few minutes before slicing it into strips.
  6. Serve the grilled chicken with sliced cucumber and shredded cabbage on the side.
