- Chicken thighs - 400 grams, boneless and skinless
- Garlic - 4 cloves, minced
- Cilantro stems - 2 tablespoons, finely chopped
- Thai bird's eye chili - 1, finely chopped (adjust to taste)
- Fish sauce - 2 tablespoons
- Soy sauce - 1 tablespoon
- Brown sugar - 1 tablespoon
- Lime juice - 2 tablespoons
- Black pepper - 1 teaspoon
- Vegetable oil - 1 tablespoon for grilling
- Cucumber - 1, sliced for serving
- Cabbage - 200 grams, shredded for side
Steps
- In a bowl, combine minced garlic, chopped cilantro stems, chopped bird's eye chili, fish sauce, soy sauce, brown sugar, lime juice, and black pepper to create the marinade.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).
- Preheat a grill or grill pan over medium-high heat and lightly oil the grill grates.
- Remove the chicken from the marinade and discard the excess marinade. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 75°C.
- Once cooked, allow the chicken to rest for a few minutes before slicing it into strips.
- Serve the grilled chicken with sliced cucumber and shredded cabbage on the side.
