Ingredients

  • Chicken breast - 300 grams
  • Coconut milk - 100 ml

  • Brown sugar - 1 tablespoon
  • Turmeric powder - 1 teaspoon
  • Curry powder - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Lemon juice - 1 tablespoon
  • Peanut butter - 50 grams
  • Coconut milk - 50 ml (for sauce)
  • Lime juice - 1 tablespoon (for sauce)
  • Chili flakes - 1 teaspoon (for sauce)
  • Salt - to taste
  • Skewers - 4 (if wooden, soaked in water for 30 minutes)

Steps

  1. Cut the chicken breast into thin strips and place them in a bowl.
  2. In a separate bowl, mix coconut milk, soy sauce, fish sauce, brown sugar, turmeric, curry powder, minced garlic, and lemon juice to create the marinade.
  3. Pour the marinade over the chicken strips, ensuring they are well coated. Cover and refrigerate for at least 15 minutes.
  4. While the chicken is marinating, prepare the peanut sauce by combining peanut butter, coconut milk, lime juice, chili flakes, and salt in a small saucepan over low heat. Stir until smooth and warm, then remove from heat.
  5. Preheat the grill or a grill pan over medium-high heat.
  6. Thread the marinated chicken strips onto the soaked skewers.
  7. Grill the chicken skewers for about 5-7 minutes on each side, or until fully cooked and slightly charred.
  8. Serve the grilled chicken skewers hot with the peanut sauce on the side.
