Ingredients

  • Chicken breast - 300 grams, sliced
  • Sataw (stink beans) - 100 grams, trimmed and halved
  • Coconut oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Shallots - 2, thinly sliced
  • Red chili - 1, sliced (adjust to taste)
  • Fish sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Fresh basil leaves - a handful, for garnish
  • Black pepper - to taste

Steps

  1. Heat the coconut oil in a large skillet over medium heat.
  2. Add the minced garlic and sliced shallots, sautéing until fragrant and translucent, about 2-3 minutes.
  3. Increase the heat to high and add the sliced chicken breast to the skillet, cooking until browned and cooked through, about 5-7 minutes.
  4. Stir in the sliced red chili and halved stink beans, cooking for an additional 3-5 minutes until the beans are tender but still crisp.
  5. Pour in the fish sauce and lime juice, stirring well to combine all the ingredients.
  6. Season with black pepper to taste, then remove from heat.
