  • Roasted rice powder - 2 tablespoons

  • Lettuce leaves - 4, for serving

Steps

  1. In a skillet over medium heat, cook the ground chicken until browned and fully cooked, about 10 minutes, breaking it apart with a spatula.
  2. Add the finely chopped lemongrass, grated galangal, and sliced shallots to the skillet, cooking for an additional 5 minutes until fragrant.
  3. Remove the skillet from heat and let the mixture cool slightly.
  4. In a large bowl, combine the cooked chicken mixture with chopped mint, chopped cilantro, lime juice, fish sauce, chili flakes, and roasted rice powder. Mix well to combine all flavors.
