- Firm Tofu - 200 grams, cubed
- Vegetable Oil - 2 tablespoons
- Red Curry Paste - 2 tablespoons
- Water - 500 ml
- Tamarind Paste - 1 tablespoon
- Palm Sugar - 1 teaspoon
- Salt - 1 teaspoon
- Green Beans - 100 grams, trimmed and cut
- Carrot - 1 medium, sliced thinly
- Bell Pepper - 1 medium, sliced
- Thai Basil - a handful, for garnish
Steps
- Heat vegetable oil in a medium pot over medium heat.
- Add the red curry paste and sauté for about 1-2 minutes until fragrant.
- Pour in the water and stir well to combine with the curry paste.
- Add the tamarind paste, palm sugar, and salt; mix until the sugar dissolves.
- Bring the mixture to a simmer and then add the cubed tofu, green beans, and carrot slices.
- Cook for about 10 minutes until the vegetables are tender.
- Add the bell pepper and cook for an additional 5 minutes.
- Taste and adjust seasoning if necessary.
- Serve the Gaeng Som hot, garnished with fresh Thai basil.
