Ingredients

  • Firm Tofu - 200 grams, cubed
  • Vegetable Oil - 2 tablespoons
  • Red Curry Paste - 2 tablespoons
  • Water - 500 ml
  • Tamarind Paste - 1 tablespoon
  • Palm Sugar - 1 teaspoon
  • Salt - 1 teaspoon
  • Green Beans - 100 grams, trimmed and cut
  • Carrot - 1 medium, sliced thinly
  • Bell Pepper - 1 medium, sliced
  • Thai Basil - a handful, for garnish

Steps

  1. Heat vegetable oil in a medium pot over medium heat.
  2. Add the red curry paste and sauté for about 1-2 minutes until fragrant.
  3. Pour in the water and stir well to combine with the curry paste.
  4. Add the tamarind paste, palm sugar, and salt; mix until the sugar dissolves.
  5. Bring the mixture to a simmer and then add the cubed tofu, green beans, and carrot slices.
  6. Cook for about 10 minutes until the vegetables are tender.
  7. Add the bell pepper and cook for an additional 5 minutes.
  8. Taste and adjust seasoning if necessary.
  9. Serve the Gaeng Som hot, garnished with fresh Thai basil.
