Ingredients

  • Cauliflower - 300 grams (for crust)
  • Almond flour - 50 grams
  • Egg - 1 large
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon (for crust)
  • Yellow curry paste - 2 tablespoons
  • Coconut milk - 100 ml
  • Fish sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Zucchini - 100 grams, thinly sliced
  • Red bell pepper - 100 grams, thinly sliced
  • Green beans - 100 grams, trimmed and cut into 2 cm pieces
  • Fresh cilantro - for garnish

Steps

  1. Preheat your oven to 200°C (400°F).
  2. To prepare the crust, steam the cauliflower florets for about 5-7 minutes or until tender. Then, drain and let it cool.
  3. Once cooled, pulse the cauliflower in a food processor until it resembles rice. Squeeze out excess moisture using a clean kitchen towel.
  4. In a bowl, combine the cauliflower rice, almond flour, egg, salt, and olive oil. Mix until a dough forms.
  5. Spread the mixture onto a lined baking sheet, shaping it into a round crust about 1 cm thick. Bake for 20 minutes until golden brown.
  6. While the crust is baking, prepare the Gaeng Som sauce by mixing the yellow curry paste with coconut milk, fish sauce, and lime juice in a small saucepan. Heat gently over medium heat until combined.
  7. Once the crust is done, remove it from the oven and spread the Gaeng Som sauce evenly over the top.
  8. Arrange the zucchini, red bell pepper, and green beans on top of the sauce.
  9. Return the pizza to the oven and bake for an additional 10-15 minutes until the vegetables are tender.
  10. Remove from the oven, garnish with fresh cilantro, and slice to serve.
