Ingredients
- Cauliflower - 300 grams (for crust)
- Almond flour - 50 grams
- Egg - 1 large
- Salt - 1/2 teaspoon
- Olive oil - 1 tablespoon (for crust)
- Yellow curry paste - 2 tablespoons
- Coconut milk - 100 ml
- Fish sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Zucchini - 100 grams, thinly sliced
- Red bell pepper - 100 grams, thinly sliced
- Green beans - 100 grams, trimmed and cut into 2 cm pieces
- Fresh cilantro - for garnish
Steps
- Preheat your oven to 200°C (400°F).
- To prepare the crust, steam the cauliflower florets for about 5-7 minutes or until tender. Then, drain and let it cool.
- Once cooled, pulse the cauliflower in a food processor until it resembles rice. Squeeze out excess moisture using a clean kitchen towel.
- In a bowl, combine the cauliflower rice, almond flour, egg, salt, and olive oil. Mix until a dough forms.
- Spread the mixture onto a lined baking sheet, shaping it into a round crust about 1 cm thick. Bake for 20 minutes until golden brown.
- While the crust is baking, prepare the Gaeng Som sauce by mixing the yellow curry paste with coconut milk, fish sauce, and lime juice in a small saucepan. Heat gently over medium heat until combined.
- Once the crust is done, remove it from the oven and spread the Gaeng Som sauce evenly over the top.
- Arrange the zucchini, red bell pepper, and green beans on top of the sauce.
- Return the pizza to the oven and bake for an additional 10-15 minutes until the vegetables are tender.
- Remove from the oven, garnish with fresh cilantro, and slice to serve.
