- Tamarind paste - 2 tablespoons
- Palm sugar - 1 tablespoon
- Salt - 1 teaspoon
- Turmeric powder - 1 teaspoon
- Galangal - 1 inch, sliced
- Lemongrass - 1 stalk, bruised and cut into 2-inch pieces
- Kaffir lime leaves - 3 leaves, torn
- Carrot - 1 medium, sliced
- Radish - 1 medium, sliced
- Green beans - 100 grams, chopped
- Thai eggplant - 100 grams, quartered
- Baby corn - 100 grams, halved
- Cilantro - a handful, chopped (for garnish)
- Lime - 1, cut into wedges (for serving)
Steps
- In a large pot, combine the water and vegetable broth, then bring to a boil over medium heat.
- Add the tamarind paste, palm sugar, salt, turmeric powder, galangal, lemongrass, and kaffir lime leaves to the pot, stirring well to dissolve the tamarind paste.
- Once boiling, reduce the heat to a simmer and add the sliced carrot, radish, green beans, Thai eggplant, and baby corn.
- Simmer the soup for about 15 minutes, or until the vegetables are tender yet still vibrant.
- Taste the soup and adjust the seasoning with more salt or tamarind paste if needed.
- Remove the pot from heat and discard the galangal, lemongrass, and kaffir lime leaves.
- Serve the soup hot, garnished with chopped cilantro and lime wedges on the side.
