- water - 500 ml
- tamarind paste - 2 tablespoons
- fish sauce - 2 tablespoons
- palm sugar - 1 tablespoon
- lemongrass - 1 stalk, chopped
- kaffir lime leaves - 3, torn
- fresh turmeric - 1 teaspoon, grated (or 1/2 teaspoon ground turmeric)
- green beans - 100 grams, cut into 3 cm pieces
- carrot - 1 medium, sliced
- zucchini - 1 small, sliced
- white fish fillets (such as snapper or cod) - 200 grams, cut into bite-sized pieces
- fresh coriander - for garnish
Steps
- In a medium saucepan, bring the water to a boil over medium heat.
- Add the tamarind paste, fish sauce, and palm sugar, stirring until the sugar has dissolved.
- Add the chopped lemongrass, torn kaffir lime leaves, and grated turmeric to the pot. Let it simmer for 5 minutes to infuse the flavors.
- Add the green beans and carrot slices to the pot, cooking for another 5 minutes until they start to soften.
- Stir in the zucchini slices and fish fillets, cooking for an additional 5-7 minutes until the fish is cooked through and the vegetables are tender.
- Taste the broth and adjust seasoning if necessary, adding more fish sauce or sugar as desired.
- Remove from heat and serve hot, garnished with fresh coriander.
