  • Kaffir lime leaves - 3 leaves, torn
  • Thai basil - 1/4 cup, chopped
  • Red bell pepper - 1/2, sliced
  • Green beans - 100 grams, trimmed
  • Vegetable oil - 1 tablespoon
  • Fresh coriander - for garnish

Steps

  1. Heat the vegetable oil in a saucepan over medium heat.
  2. Add the red curry paste and stir-fry for 1-2 minutes until fragrant.
  3. Pour in the coconut milk and bring to a gentle simmer.
  4. Add the fish sauce, brown sugar, and lime juice, stirring well to combine.
  5. Add the torn kaffir lime leaves, sliced red bell pepper, and green beans, cooking for about 5 minutes until the vegetables are tender.
  6. Gently fold in the crab meat and simmer for an additional 3-5 minutes until heated through.
  7. Stir in the chopped Thai basil just before serving.
  8. Serve hot, garnished with fresh coriander.
