Ingredients

  • Ground chicken - 250 grams
  • Red curry paste - 2 tablespoons
  • Coconut flour - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Fish sauce - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Cilantro - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Romaine lettuce leaves - 4 large
  • Cucumber - 1 small, thinly sliced
  • Carrot - 1 small, grated
  • Coconut cream - 2 tablespoons
  • Chili flakes - 1/4 teaspoon (optional)

Steps

  1. In a mixing bowl, combine the ground chicken, red curry paste, coconut flour, lime juice, fish sauce, minced garlic, grated ginger, chopped cilantro, salt, and black pepper. Mix well until fully incorporated.
  2. Form the mixture into 2 equal-sized patties.
  3. Heat a non-stick skillet over medium heat and add a little oil if necessary. Cook the patties for about 5-7 minutes on each side, or until they are cooked through and have a nice golden-brown crust.
  4. While the patties are cooking, prepare the cucumber and carrot salad by tossing the sliced cucumber and grated carrot in a small bowl. Add a pinch of salt and lime juice to taste.
  5. Once the patties are cooked, place each patty on a large lettuce leaf. Top with the cucumber and carrot salad, and drizzle with coconut cream. If desired, sprinkle with chili flakes for extra heat.
