Ingredients

  • Bell pepper, sliced - 1 medium
  • Zucchini, sliced - 1 medium
  • Thai basil leaves - 1/4 cup
  • Fish sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Brown sugar - 1 teaspoon

Steps

  1. In a medium saucepan, heat the vegetable oil over medium heat.
  2. Add the red curry paste and sauté for 1-2 minutes until fragrant.
  3. Pour in the coconut milk and bring to a gentle simmer.
  4. Add the sliced chicken breast and cook for about 5-7 minutes, until the chicken is cooked through.
  5. Stir in the sliced bell pepper and zucchini, and simmer for an additional 5 minutes until the vegetables are tender.
  6. Add the fish sauce, lime juice, and brown sugar, stirring to combine.
  7. Remove from heat and fold in the Thai basil leaves.
