Ingredients

  • Chicken breast - 200 grams, thinly sliced
  • Panaeng curry paste - 2 tablespoons
  • Coconut milk - 200 ml, light
  • Red bell pepper - 1, sliced
  • Green beans - 100 grams, trimmed and halved
  • Thai basil leaves - 10 grams, fresh
  • Fish sauce - 1 tablespoon
  • Brown sugar - 1 teaspoon
  • Lime juice - 1 tablespoon
  • Vegetable oil - 1 tablespoon

Steps

  1. Heat the vegetable oil in a medium-sized pan over medium heat.
  2. Add the Panaeng curry paste and sauté for 1-2 minutes until fragrant.
  3. Add the sliced chicken breast to the pan and cook for 5-7 minutes until no longer pink.
  4. Pour in the light coconut milk, stirring to combine with the curry paste and chicken.
  5. Add the sliced red bell pepper and green beans, and simmer for 10 minutes until vegetables are tender.
  6. Stir in the fish sauce, brown sugar, and lime juice, adjusting to taste.
  7. Remove from heat and stir in fresh Thai basil leaves before serving.
