- Almond flour - 150 grams
- Egg - 1 large
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Ground black pepper - 1/4 teaspoon
- Coconut milk - 200 ml
- Massaman curry paste - 2 tablespoons
- Cooked chicken breast, shredded - 150 grams
- Red bell pepper, sliced - 1/2 medium
- Onion, thinly sliced - 1/2 medium
- Cilantro leaves, chopped - 2 tablespoons
- Lime wedges - 2
Steps
- Preheat the oven to 200°C (400°F).
- In a mixing bowl, combine almond flour, egg, olive oil, salt, and black pepper. Mix until a dough forms.
- Press the dough onto a baking sheet lined with parchment paper to form a pizza crust, about 1 cm thick.
- Bake the crust in the preheated oven for 10-12 minutes or until golden brown.
- In a saucepan, combine coconut milk and Massaman curry paste over medium heat, stirring until well mixed and heated through.
- Add the shredded chicken, sliced red bell pepper, and onion to the saucepan. Cook for an additional 5 minutes until the vegetables are slightly softened.
- Remove the crust from the oven and evenly spread the Massaman chicken mixture over it.
- Return the pizza to the oven and bake for an additional 8-10 minutes until everything is heated through.
- Remove from the oven and garnish with chopped cilantro and serve with lime wedges.
