Ingredients

  • Coconut milk - 400 ml
  • Massaman curry paste - 3 tablespoons
  • Firm tofu - 200 grams, cubed
  • Potato - 1 medium, diced
  • Carrot - 1 medium, sliced
  • Onion - 1 medium, chopped
  • Peanuts - 50 grams, roasted and unsalted
  • Green beans - 100 grams, trimmed and cut into pieces
  • Soy sauce - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Salt - to taste
  • Fresh coriander - for garnish

Steps

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Stir in the Massaman curry paste and cook for another 2 minutes, allowing the spices to release their aroma.
  3. Add the cubed tofu and cook for 5 minutes, stirring gently to coat the tofu with the curry paste.
  4. Pour in the coconut milk and stir well to combine. Bring to a simmer.
  5. Add the diced potato and sliced carrot. Cook for 10 minutes until the vegetables start to soften.
  6. Stir in the green beans and soy sauce, and continue to simmer for another 5 minutes.
  7. Add the brown sugar, lime juice, and roasted peanuts. Stir to combine and adjust seasoning with salt if necessary.
  8. Once everything is cooked through, remove from heat and let it sit for a few minutes.
  9. Serve hot, garnished with fresh coriander.
