- Coconut milk - 400 ml
- Massaman curry paste - 3 tablespoons
- Firm tofu - 200 grams, cubed
- Potato - 1 medium, diced
- Carrot - 1 medium, sliced
- Onion - 1 medium, chopped
- Peanuts - 50 grams, roasted and unsalted
- Green beans - 100 grams, trimmed and cut into pieces
- Soy sauce - 2 tablespoons
- Brown sugar - 1 tablespoon
- Lime juice - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Salt - to taste
- Fresh coriander - for garnish
Steps
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the Massaman curry paste and cook for another 2 minutes, allowing the spices to release their aroma.
- Add the cubed tofu and cook for 5 minutes, stirring gently to coat the tofu with the curry paste.
- Pour in the coconut milk and stir well to combine. Bring to a simmer.
- Add the diced potato and sliced carrot. Cook for 10 minutes until the vegetables start to soften.
- Stir in the green beans and soy sauce, and continue to simmer for another 5 minutes.
- Add the brown sugar, lime juice, and roasted peanuts. Stir to combine and adjust seasoning with salt if necessary.
- Once everything is cooked through, remove from heat and let it sit for a few minutes.
- Serve hot, garnished with fresh coriander.
