Ingredients

  • Chicken thighs, boneless - 300 grams
  • Coconut milk - 400 ml
  • Massaman curry paste - 3 tablespoons
  • Potatoes, diced - 150 grams
  • Carrots, sliced - 100 grams
  • Onion, chopped - 1 medium
  • Roasted peanuts, crushed - 30 grams
  • Fish sauce - 1 tablespoon
  • Brown sugar - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Bay leaves - 2
  • Cinnamon stick - 1
  • Water - 200 ml

Steps

  1. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Add the Massaman curry paste to the pot and stir for 1-2 minutes until fragrant.
  3. Add the chicken thighs to the pot, stirring to coat them with the curry paste. Cook for about 5 minutes until the chicken is browned.
  4. Pour in the coconut milk and water, then add the diced potatoes, sliced carrots, bay leaves, and cinnamon stick. Stir to combine.
  5. Bring the mixture to a gentle simmer, cover, and cook for 20-25 minutes until the chicken is cooked through and the vegetables are tender.
  6. Stir in the fish sauce, brown sugar, crushed peanuts, and lime juice. Adjust seasoning to taste and simmer for an additional 5 minutes.
  7. Remove from heat, discard the bay leaves and cinnamon stick, and serve hot with steamed rice.
