- Chicken thighs, boneless - 300 grams
- Coconut milk - 400 ml
- Massaman curry paste - 3 tablespoons
- Potatoes, diced - 150 grams
- Carrots, sliced - 100 grams
- Onion, chopped - 1 medium
- Roasted peanuts, crushed - 30 grams
- Fish sauce - 1 tablespoon
- Brown sugar - 1 tablespoon
- Lime juice - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Bay leaves - 2
- Cinnamon stick - 1
- Water - 200 ml
Steps
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the Massaman curry paste to the pot and stir for 1-2 minutes until fragrant.
- Add the chicken thighs to the pot, stirring to coat them with the curry paste. Cook for about 5 minutes until the chicken is browned.
- Pour in the coconut milk and water, then add the diced potatoes, sliced carrots, bay leaves, and cinnamon stick. Stir to combine.
- Bring the mixture to a gentle simmer, cover, and cook for 20-25 minutes until the chicken is cooked through and the vegetables are tender.
- Stir in the fish sauce, brown sugar, crushed peanuts, and lime juice. Adjust seasoning to taste and simmer for an additional 5 minutes.
- Remove from heat, discard the bay leaves and cinnamon stick, and serve hot with steamed rice.
