Ingredients

  • Chicken breast - 300 grams, diced
  • Coconut milk - 400 ml
  • Massaman curry paste - 3 tablespoons
  • Potato - 1 medium, peeled and diced
  • Carrot - 1 medium, sliced
  • Onion - 1 medium, chopped
  • Peanuts - 30 grams, crushed
  • Vegetable oil - 1 tablespoon
  • Fish sauce - 1 tablespoon
  • Brown sugar - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Cilantro - for garnish
  • Water - 100 ml

Steps

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the Massaman curry paste and cook for another 2 minutes until fragrant.
  4. Add the diced chicken and cook until it is no longer pink, about 5-7 minutes.
  5. Pour in the coconut milk and water, stirring to combine.
  6. Add the diced potato and sliced carrot, then bring the mixture to a gentle simmer.
  7. Cover the pot and cook for 15-20 minutes until the vegetables are tender.
  8. Stir in the fish sauce, brown sugar, and lime juice, mixing well.
  9. Add the crushed peanuts and let it simmer for an additional 5 minutes.
  10. Serve hot, garnished with fresh cilantro.
