- Chicken breast - 300 grams, diced
- Coconut milk - 400 ml
- Massaman curry paste - 3 tablespoons
- Potato - 1 medium, peeled and diced
- Carrot - 1 medium, sliced
- Onion - 1 medium, chopped
- Peanuts - 30 grams, crushed
- Vegetable oil - 1 tablespoon
- Fish sauce - 1 tablespoon
- Brown sugar - 1 tablespoon
- Lime juice - 1 tablespoon
- Cilantro - for garnish
- Water - 100 ml
Steps
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the Massaman curry paste and cook for another 2 minutes until fragrant.
- Add the diced chicken and cook until it is no longer pink, about 5-7 minutes.
- Pour in the coconut milk and water, stirring to combine.
- Add the diced potato and sliced carrot, then bring the mixture to a gentle simmer.
- Cover the pot and cook for 15-20 minutes until the vegetables are tender.
- Stir in the fish sauce, brown sugar, and lime juice, mixing well.
- Add the crushed peanuts and let it simmer for an additional 5 minutes.
- Serve hot, garnished with fresh cilantro.
