  • Water - 300 ml
  • Lemongrass stalk, bruised - 1
  • Kaffir lime leaves - 3
  • Thai basil leaves - a handful
  • Mushrooms, sliced - 100 g
  • Cherry tomatoes, halved - 100 g
  • Green beans, trimmed - 100 g
  • Cilantro leaves, for garnish - a handful

Steps

  1. In a pot over medium heat, combine the coconut milk and Thai red curry paste, stirring until fragrant.
  2. Add the diced chicken breast and cook until it starts to brown, about 5 minutes.
  3. Stir in the fish sauce, tamarind paste, and brown sugar, mixing well.
  4. Pour in the water and add the bruised lemongrass and kaffir lime leaves. Bring to a gentle simmer.
