- Firm tofu - 200 grams
- Carrot - 1 medium, sliced
- Mushrooms (shiitake or button) - 100 grams, sliced
- Celery - 1 stalk, sliced
- Garlic - 2 cloves, minced
- Vegetable broth - 500 ml
- Soy sauce - 1 tablespoon
- Salt - to taste
- White pepper - to taste
- Green onions - 2 stalks, chopped (for garnish)
- Fresh coriander - a handful (for garnish)
Steps
- Press the firm tofu for 15 minutes to remove excess moisture, then cut into cubes.
- In a pot, heat a small amount of oil over medium heat and sauté the minced garlic until fragrant.
- Add the sliced carrots, mushrooms, and celery to the pot, cooking for about 5 minutes until they begin to soften.
- Pour in the vegetable broth and bring the mixture to a boil.
- Once boiling, reduce the heat to a simmer and gently add the cubed tofu.
- Add the soy sauce, salt, and white pepper, then simmer for an additional 10-15 minutes, allowing the flavors to meld.
- Taste and adjust seasoning if necessary, then remove from heat.
- Serve hot, garnished with chopped green onions and fresh coriander.
