Ingredients

  • Firm tofu - 200 grams
  • Carrot - 1 medium, sliced
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Celery - 1 stalk, sliced
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Soy sauce - 1 tablespoon
  • Salt - to taste
  • White pepper - to taste
  • Green onions - 2 stalks, chopped (for garnish)
  • Fresh coriander - a handful (for garnish)

Steps

  1. Press the firm tofu for 15 minutes to remove excess moisture, then cut into cubes.
  2. In a pot, heat a small amount of oil over medium heat and sauté the minced garlic until fragrant.
  3. Add the sliced carrots, mushrooms, and celery to the pot, cooking for about 5 minutes until they begin to soften.
  4. Pour in the vegetable broth and bring the mixture to a boil.
  5. Once boiling, reduce the heat to a simmer and gently add the cubed tofu.
  6. Add the soy sauce, salt, and white pepper, then simmer for an additional 10-15 minutes, allowing the flavors to meld.
  7. Taste and adjust seasoning if necessary, then remove from heat.
  8. Serve hot, garnished with chopped green onions and fresh coriander.
