Ingredients

  • Chicken breast - 200 grams, diced
  • Low-sodium chicken broth - 500 ml
  • Carrot - 1 medium, sliced
  • Mushrooms - 100 grams, sliced
  • Chinese cabbage - 100 grams, chopped
  • Eggs - 2 large
  • Garlic - 2 cloves, minced
  • Soy sauce - 1 tablespoon
  • Fish sauce - 1 teaspoon
  • White pepper - 1/2 teaspoon
  • Green onions - 2 stalks, chopped
  • Cilantro - a handful, for garnish

Steps

  1. In a pot, heat the chicken broth over medium heat until it begins to simmer.
  2. Add the minced garlic and sliced carrots to the pot, cooking for about 5 minutes until the carrots start to soften.
  3. Stir in the diced chicken breast and cook for another 5-7 minutes until the chicken is cooked through.
  4. Add the sliced mushrooms and chopped Chinese cabbage, simmering for an additional 5 minutes.
  5. In a small bowl, whisk the eggs and then gently pour them into the soup while stirring to create egg ribbons.
  6. Season the soup with soy sauce, fish sauce, and white pepper, mixing well.
  7. Remove from heat and stir in chopped green onions and cilantro.
  8. Serve hot, garnished with additional cilantro if desired.
