  • Coconut milk - 200 ml
  • Fresh cilantro - for garnish

Steps

  1. Heat the coconut oil in a large pot over medium heat.
  2. Add the sliced shallots and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and grated ginger; cook for an additional 1-2 minutes until fragrant.

  5. Mix in the red curry paste, fish sauce, tamarind paste, and sweetener (if using), stirring well to combine.
  6. Pour in the coconut milk, bring the mixture to a gentle simmer, and reduce the heat to low.
  7. Cover the pot and let it simmer for 25-30 minutes, stirring occasionally, until the pork is tender.
  8. Serve hot, garnished with fresh cilantro and lime wedges on the side.
