  • Lime juice - 1 tablespoon
  • Garlic, minced - 2 cloves
  • Ginger, grated - 1 teaspoon
  • Fresh cilantro, chopped - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a mixing bowl, combine the coconut milk, Thai red curry paste, brown sugar, fish sauce, lime juice, minced garlic, grated ginger, salt, and black pepper to create the marinade.
  2. Cut the chicken thighs into bite-sized pieces and add them to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.
  3. Preheat the grill to medium-high heat. Thread the marinated chicken onto skewers.
  4. Grill the chicken skewers for about 10-12 minutes, turning occasionally, until fully cooked and slightly charred.
