Ingredients

  • Eggs - 4 large
  • Fresh Thai basil leaves - 30 grams
  • Garlic - 2 cloves, minced
  • Coconut oil - 1 tablespoon
  • Soy sauce (or tamari for gluten-free) - 1 tablespoon
  • Chili flakes - 1 teaspoon (adjust to taste)
  • Salt - to taste
  • Black pepper - to taste
  • Lime wedges - for serving

Steps

  1. Heat the coconut oil in a non-stick skillet over medium heat until hot.
  2. Add the minced garlic and chili flakes to the skillet, sautéing for about 30 seconds until fragrant.
  3. Crack the eggs into the skillet, being careful not to break the yolks. Cook for about 2-3 minutes until the whites are set but the yolks are still runny.
  4. Sprinkle the soy sauce over the eggs and add the fresh Thai basil leaves on top.
  5. Cover the skillet with a lid and let it cook for an additional 1-2 minutes to wilt the basil and finish cooking the eggs to your desired doneness.
  6. Season with salt and black pepper to taste. Serve immediately with lime wedges on the side.
