Ingredients

  • Carrot - 100 grams, grated
  • Zucchini - 100 grams, grated
  • Red bell pepper - 50 grams, finely chopped
  • Green onion - 2, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Cilantro - 2 tablespoons, chopped
  • Thai red curry paste - 1 tablespoon
  • Chickpeas - 200 grams, cooked and mashed
  • Breadcrumbs - 50 grams
  • Egg - 1, beaten
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Oil - for frying
  • Burger buns - 2, whole wheat or regular
  • Lettuce - 2 leaves
  • Tomato - 1, sliced
  • Cucumber - 1/2, sliced
  • Thai sweet chili sauce - for serving

Steps

  1. In a large mixing bowl, combine the grated carrot, zucchini, red bell pepper, green onion, garlic, ginger, and cilantro.
  2. Add the mashed chickpeas, Thai red curry paste, breadcrumbs, beaten egg, salt, and black pepper to the vegetable mixture and mix until well combined.
  3. Divide the mixture into two equal portions and form each into a patty.
  4. Heat oil in a non-stick skillet over medium heat. Once hot, carefully place the patties in the skillet and cook for about 4-5 minutes on each side, or until golden brown and crispy.
  5. While the patties are cooking, prepare the burger buns by lightly toasting them if desired.
  6. Once the patties are done, assemble the burgers by placing a lettuce leaf on each bun, followed by the crispy patty, tomato slice, and cucumber slices.
  7. Drizzle Thai sweet chili sauce on top and close the burgers with the other half of the bun.
