- Carrot - 100 grams, grated
- Zucchini - 100 grams, grated
- Red bell pepper - 50 grams, finely chopped
- Green onion - 2, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Cilantro - 2 tablespoons, chopped
- Thai red curry paste - 1 tablespoon
- Chickpeas - 200 grams, cooked and mashed
- Breadcrumbs - 50 grams
- Egg - 1, beaten
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Oil - for frying
- Burger buns - 2, whole wheat or regular
- Lettuce - 2 leaves
- Tomato - 1, sliced
- Cucumber - 1/2, sliced
- Thai sweet chili sauce - for serving
Steps
- In a large mixing bowl, combine the grated carrot, zucchini, red bell pepper, green onion, garlic, ginger, and cilantro.
- Add the mashed chickpeas, Thai red curry paste, breadcrumbs, beaten egg, salt, and black pepper to the vegetable mixture and mix until well combined.
- Divide the mixture into two equal portions and form each into a patty.
- Heat oil in a non-stick skillet over medium heat. Once hot, carefully place the patties in the skillet and cook for about 4-5 minutes on each side, or until golden brown and crispy.
- While the patties are cooking, prepare the burger buns by lightly toasting them if desired.
- Once the patties are done, assemble the burgers by placing a lettuce leaf on each bun, followed by the crispy patty, tomato slice, and cucumber slices.
- Drizzle Thai sweet chili sauce on top and close the burgers with the other half of the bun.
