Ingredients

  • Firm tofu - 200g
  • Soy sauce - 2 tablespoons
  • Peanut butter - 2 tablespoons
  • Coconut milk - 50ml
  • Lime juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Turmeric powder - 1/2 teaspoon
  • Chili powder - 1/2 teaspoon
  • Whole wheat burger buns - 2
  • Cucumber - 1/2, sliced
  • Carrot - 1, grated
  • Fresh cilantro - a handful, chopped
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut it into 2 equal burger-sized slices.
  2. In a bowl, mix soy sauce, peanut butter, coconut milk, lime juice, minced garlic, grated ginger, turmeric, chili powder, salt, and pepper to create the marinade.
  3. Marinate the tofu slices in the mixture for at least 10 minutes.
  4. Heat olive oil in a pan over medium heat and cook the marinated tofu slices for about 4-5 minutes on each side until golden brown and crispy.
  5. While the tofu is cooking, prepare the burger buns by toasting them lightly in another pan for about 2 minutes.
  6. Assemble the burgers: spread some of the remaining peanut sauce on the bottom bun, add the crispy tofu, top with sliced cucumber, grated carrot, and chopped cilantro.
  7. Cover with the top bun and serve immediately with your favorite side.
