- Firm tofu - 200g
- Soy sauce - 2 tablespoons
- Peanut butter - 2 tablespoons
- Coconut milk - 50ml
- Lime juice - 1 tablespoon
- Garlic - 1 clove, minced
- Ginger - 1 teaspoon, grated
- Turmeric powder - 1/2 teaspoon
- Chili powder - 1/2 teaspoon
- Whole wheat burger buns - 2
- Cucumber - 1/2, sliced
- Carrot - 1, grated
- Fresh cilantro - a handful, chopped
- Olive oil - 1 tablespoon
- Salt - to taste
- Pepper - to taste
Steps
- Press the tofu for 15 minutes to remove excess moisture, then cut it into 2 equal burger-sized slices.
- In a bowl, mix soy sauce, peanut butter, coconut milk, lime juice, minced garlic, grated ginger, turmeric, chili powder, salt, and pepper to create the marinade.
- Marinate the tofu slices in the mixture for at least 10 minutes.
- Heat olive oil in a pan over medium heat and cook the marinated tofu slices for about 4-5 minutes on each side until golden brown and crispy.
- While the tofu is cooking, prepare the burger buns by toasting them lightly in another pan for about 2 minutes.
- Assemble the burgers: spread some of the remaining peanut sauce on the bottom bun, add the crispy tofu, top with sliced cucumber, grated carrot, and chopped cilantro.
- Cover with the top bun and serve immediately with your favorite side.
