Ingredients

  • Firm tofu - 200 grams
  • Whole wheat pizza base - 1 (approximately 30 cm diameter)
  • Peanut butter - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Chili paste - 1 teaspoon
  • Red bell pepper - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Green onion - 2, chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Mozzarella cheese - 100 grams, shredded
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Drain the tofu and press it between paper towels to remove excess moisture, then cut it into small cubes.
  3. In a pan, heat olive oil over medium heat and add the tofu cubes. Season with salt and black pepper, frying until golden and crispy, about 8-10 minutes. Remove from heat.
  4. In a small bowl, mix peanut butter, soy sauce, lime juice, minced garlic, and chili paste until smooth to create the sauce.
  5. Spread the peanut sauce evenly over the pizza base.
  6. Top the pizza with the crispy tofu, sliced red bell pepper, julienned carrot, and shredded mozzarella cheese.
  7. Bake in the preheated oven for 12-15 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven, and garnish with chopped green onions and fresh cilantro before slicing and serving.
