Ingredients
- Rice noodles - 150 grams
- Firm tofu - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Red bell pepper - 1, sliced
- Carrot - 1 medium, julienned
- Broccoli florets - 100 grams
- Soy sauce - 3 tablespoons
- Lime juice - 2 tablespoons
- Fresh basil - a handful, chopped
- Crushed peanuts - 2 tablespoons
- Chili flakes - 1 teaspoon (optional)
- Salt - to taste
Steps
- Press the tofu for 15 minutes to remove excess moisture, then cut it into bite-sized cubes.
- Cook the rice noodles according to package instructions, drain, and set aside.
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the tofu and fry until golden and crispy on all sides, about 8-10 minutes. Remove and set aside.
- In the same skillet, add the remaining tablespoon of olive oil. Sauté the minced garlic for 1 minute until fragrant.
- Add the sliced red bell pepper, julienned carrot, and broccoli florets to the skillet. Stir-fry for about 5 minutes until the vegetables are tender but still crisp.
- Return the crispy tofu to the skillet, then add the cooked rice noodles, soy sauce, lime juice, and chili flakes (if using). Toss everything together for 2-3 minutes until well combined and heated through.
- Remove from heat and stir in the chopped basil.
- Serve hot, garnished with crushed peanuts and additional lime wedges if desired.
