Ingredients

  • Rice noodles - 150 grams
  • Firm tofu - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Red bell pepper - 1, sliced
  • Carrot - 1 medium, julienned
  • Broccoli florets - 100 grams
  • Soy sauce - 3 tablespoons
  • Lime juice - 2 tablespoons
  • Fresh basil - a handful, chopped
  • Crushed peanuts - 2 tablespoons
  • Chili flakes - 1 teaspoon (optional)
  • Salt - to taste

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut it into bite-sized cubes.
  2. Cook the rice noodles according to package instructions, drain, and set aside.
  3. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the tofu and fry until golden and crispy on all sides, about 8-10 minutes. Remove and set aside.
  4. In the same skillet, add the remaining tablespoon of olive oil. Sauté the minced garlic for 1 minute until fragrant.
  5. Add the sliced red bell pepper, julienned carrot, and broccoli florets to the skillet. Stir-fry for about 5 minutes until the vegetables are tender but still crisp.
  6. Return the crispy tofu to the skillet, then add the cooked rice noodles, soy sauce, lime juice, and chili flakes (if using). Toss everything together for 2-3 minutes until well combined and heated through.
  7. Remove from heat and stir in the chopped basil.
  8. Serve hot, garnished with crushed peanuts and additional lime wedges if desired.
