Ingredients

  • Rice noodles - 150 grams
  • Firm tofu - 200 grams
  • Cornstarch - 2 tablespoons
  • Vegetable oil - 3 tablespoons
  • Red bell pepper - 1 medium, sliced
  • Cucumber - 1 medium, julienned
  • Carrot - 1 medium, grated
  • Green onions - 2, chopped
  • Fresh cilantro - 1/4 cup, chopped
  • Lime juice - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Maple syrup - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Chili flakes - 1/2 teaspoon (optional)
  • Salt - to taste

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut it into bite-sized cubes.
  2. In a bowl, coat the tofu cubes with cornstarch and a pinch of salt.
  3. Heat 2 tablespoons of vegetable oil in a frying pan over medium heat. Add the tofu cubes and cook until golden and crispy on all sides, about 8-10 minutes. Remove from heat and set aside.
  4. Cook the rice noodles according to package instructions, typically about 6-8 minutes, until tender. Drain and rinse under cold water to stop the cooking process.
  5. In a large bowl, combine the cooked noodles, crispy tofu, sliced bell pepper, julienned cucumber, grated carrot, chopped green onions, and cilantro.
  6. In a small bowl, whisk together lime juice, soy sauce, maple syrup, sesame oil, and chili flakes (if using) to make the dressing.
  7. Pour the dressing over the noodle salad and toss gently to combine. Adjust salt to taste.
  8. Serve immediately, garnished with additional cilantro if desired.
