- Rice noodles - 150 grams
- Firm tofu - 200 grams
- Cornstarch - 2 tablespoons
- Vegetable oil - 3 tablespoons
- Red bell pepper - 1 medium, sliced
- Cucumber - 1 medium, julienned
- Carrot - 1 medium, grated
- Green onions - 2, chopped
- Fresh cilantro - 1/4 cup, chopped
- Lime juice - 2 tablespoons
- Soy sauce - 2 tablespoons
- Maple syrup - 1 tablespoon
- Sesame oil - 1 teaspoon
- Chili flakes - 1/2 teaspoon (optional)
- Salt - to taste
Steps
- Press the tofu for 15 minutes to remove excess moisture, then cut it into bite-sized cubes.
- In a bowl, coat the tofu cubes with cornstarch and a pinch of salt.
- Heat 2 tablespoons of vegetable oil in a frying pan over medium heat. Add the tofu cubes and cook until golden and crispy on all sides, about 8-10 minutes. Remove from heat and set aside.
- Cook the rice noodles according to package instructions, typically about 6-8 minutes, until tender. Drain and rinse under cold water to stop the cooking process.
- In a large bowl, combine the cooked noodles, crispy tofu, sliced bell pepper, julienned cucumber, grated carrot, chopped green onions, and cilantro.
- In a small bowl, whisk together lime juice, soy sauce, maple syrup, sesame oil, and chili flakes (if using) to make the dressing.
