Ingredients

  • Cooked Jasmine rice - 200 grams
  • Cornstarch - 2 tablespoons
  • Fresh cilantro - 2 tablespoons, chopped
  • Green onion - 2 tablespoons, finely chopped
  • Carrot - 1 medium, grated
  • Thai red chili - 1, finely chopped (adjust to taste)
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable oil - for frying
  • Burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Cucumber - 1/2, sliced
  • Thai sweet chili sauce - for serving

Steps

  1. In a bowl, combine the cooked Jasmine rice, cornstarch, chopped cilantro, green onion, grated carrot, chopped chili, salt, and black pepper. Mix well until all ingredients are incorporated.
  2. Divide the rice mixture into two equal portions and shape each portion into a patty.
  3. Heat vegetable oil in a frying pan over medium heat. Once hot, carefully place the rice patties in the pan.
  4. Fry each patty for about 4-5 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.
  5. To assemble the burgers, place a lettuce leaf on the bottom half of each bun, followed by a crispy rice patty, sliced tomato, and cucumber. Drizzle with Thai sweet chili sauce.
  6. Top with the other half of the bun, serve immediately, and enjoy!
