Ingredients

  • Pork tenderloin - 200 grams
  • Rice noodles - 100 grams
  • Bell pepper (sliced) - 1 medium
  • Carrot (julienned) - 1 medium
  • Broccoli florets - 100 grams
  • Garlic (minced) - 2 cloves
  • Soy sauce (low sodium) - 3 tablespoons
  • Fish sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Honey - 1 teaspoon
  • Sesame oil - 1 tablespoon
  • Fresh cilantro (chopped) - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Chili flakes - optional, to taste

Steps

  1. Cook the rice noodles according to package instructions, drain, and set aside.
  2. Slice the pork tenderloin into thin strips and season with salt and black pepper.
  3. In a large pan or wok, heat sesame oil over medium-high heat. Add minced garlic and sauté until fragrant.
  4. Add the seasoned pork to the pan and cook until browned and crispy, about 5-7 minutes. Remove pork from the pan and set aside.
  5. In the same pan, add bell pepper, carrot, and broccoli. Stir-fry for about 4-5 minutes until the vegetables are tender but still crisp.
  6. Return the crispy pork to the pan with the vegetables. In a small bowl, mix soy sauce, fish sauce, lime juice, and honey, then pour this sauce over the pork and vegetables, stirring to combine.
  7. Add the cooked noodles to the pan and toss everything together for another 2-3 minutes to ensure the noodles are heated through and coated with the sauce.
  8. Serve hot, garnished with fresh cilantro and chili flakes if desired.
