- Bell pepper (sliced) - 1 medium
- Carrot (julienned) - 1 medium
- Broccoli florets - 100 grams
- Garlic (minced) - 2 cloves
- Soy sauce (low sodium) - 3 tablespoons
- Fish sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Honey - 1 teaspoon
- Sesame oil - 1 tablespoon
- Fresh cilantro (chopped) - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Chili flakes - optional, to taste
Steps
- Cook the rice noodles according to package instructions, drain, and set aside.
- Slice the pork tenderloin into thin strips and season with salt and black pepper.
- In a large pan or wok, heat sesame oil over medium-high heat. Add minced garlic and sauté until fragrant.
- Add the seasoned pork to the pan and cook until browned and crispy, about 5-7 minutes. Remove pork from the pan and set aside.
- In the same pan, add bell pepper, carrot, and broccoli. Stir-fry for about 4-5 minutes until the vegetables are tender but still crisp.
- Return the crispy pork to the pan with the vegetables. In a small bowl, mix soy sauce, fish sauce, lime juice, and honey, then pour this sauce over the pork and vegetables, stirring to combine.
- Add the cooked noodles to the pan and toss everything together for another 2-3 minutes to ensure the noodles are heated through and coated with the sauce.
- Serve hot, garnished with fresh cilantro and chili flakes if desired.
