Ingredients

  • Tapioca pearls - 60 grams
  • Coconut milk - 200 ml
  • Water - 250 ml
  • Sugar - 30 grams
  • Salt - 1/4 teaspoon
  • Vanilla extract - 1/2 teaspoon
  • Mango (for topping) - 1/2 medium, diced

Steps

  1. Rinse the tapioca pearls under cold water to remove excess starch, then set aside.
  2. In a medium saucepan, combine the water and tapioca pearls, and bring to a boil over medium heat.
  3. Once boiling, reduce heat to low and simmer for about 15 minutes, stirring occasionally, until the tapioca pearls become translucent.
  4. Add the coconut milk, sugar, salt, and vanilla extract to the saucepan. Stir well and cook for another 5-10 minutes, until the mixture thickens slightly.
  5. Remove from heat and let the pudding cool for about 10 minutes, stirring occasionally to prevent a skin from forming.
