- Palm sugar - 30 grams
- Salt - a pinch
- Vanilla extract - 1 teaspoon
- Fresh mango - 100 grams (for topping)
Steps
- Rinse the tapioca pearls under cold water until the water runs clear.
- In a saucepan, combine the water and tapioca pearls. Bring to a gentle boil over medium heat.
- Once boiling, reduce the heat to low and simmer for about 15 minutes or until the tapioca pearls are translucent, stirring occasionally.
- Remove from heat and let the tapioca sit covered for 10 minutes to continue cooking in the steam.
- In a separate saucepan, combine the coconut milk, palm sugar, a pinch of salt, and vanilla extract. Heat gently until the sugar dissolves, but do not boil.
- Drain any excess water from the cooked tapioca and add it to the coconut milk mixture. Stir well to combine.
- Let the dessert cool slightly before serving. Divide into bowls and top with fresh mango slices.
