  • Palm sugar - 30 grams

  • Vanilla extract - 1 teaspoon
  • Fresh mango - 100 grams (for topping)

Steps

  1. Rinse the tapioca pearls under cold water until the water runs clear.
  2. In a saucepan, combine the water and tapioca pearls. Bring to a gentle boil over medium heat.
  3. Once boiling, reduce the heat to low and simmer for about 15 minutes or until the tapioca pearls are translucent, stirring occasionally.
  4. Remove from heat and let the tapioca sit covered for 10 minutes to continue cooking in the steam.
  5. In a separate saucepan, combine the coconut milk, palm sugar, a pinch of salt, and vanilla extract. Heat gently until the sugar dissolves, but do not boil.
  6. Drain any excess water from the cooked tapioca and add it to the coconut milk mixture. Stir well to combine.
  7. Let the dessert cool slightly before serving. Divide into bowls and top with fresh mango slices.
