- Tapioca pearls - 50 grams
- Coconut milk - 200 ml
- Water - 300 ml
- Palm sugar (or brown sugar) - 30 grams
- Salt - 1/4 teaspoon
- Vanilla extract - 1/2 teaspoon
- Fresh mango (for topping) - 1 small, diced
Steps
- In a medium saucepan, bring 300 ml of water to a boil.
- Add the tapioca pearls to the boiling water and reduce the heat to medium. Cook for about 15 minutes, stirring occasionally, until the pearls become translucent.
- Once cooked, remove the saucepan from heat and let the tapioca pearls sit for 10 minutes to absorb the water.
- In a separate saucepan, combine the coconut milk, palm sugar, salt, and vanilla extract. Heat over low heat until the sugar dissolves completely, stirring occasionally.
- Drain any excess water from the tapioca pearls and add them to the coconut milk mixture. Stir gently to combine.
- Cook the mixture over low heat for an additional 5 minutes, allowing the flavors to meld together.
- Serve warm or chilled, topped with diced fresh mango.
