Ingredients

  • Tapioca pearls - 50 grams
  • Coconut milk - 200 ml
  • Water - 300 ml
  • Palm sugar (or brown sugar) - 30 grams
  • Salt - 1/4 teaspoon
  • Vanilla extract - 1/2 teaspoon
  • Fresh mango (for topping) - 1 small, diced

Steps

  1. In a medium saucepan, bring 300 ml of water to a boil.
  2. Add the tapioca pearls to the boiling water and reduce the heat to medium. Cook for about 15 minutes, stirring occasionally, until the pearls become translucent.
  3. Once cooked, remove the saucepan from heat and let the tapioca pearls sit for 10 minutes to absorb the water.
  4. In a separate saucepan, combine the coconut milk, palm sugar, salt, and vanilla extract. Heat over low heat until the sugar dissolves completely, stirring occasionally.
  5. Drain any excess water from the tapioca pearls and add them to the coconut milk mixture. Stir gently to combine.
  6. Cook the mixture over low heat for an additional 5 minutes, allowing the flavors to meld together.
  7. Serve warm or chilled, topped with diced fresh mango.
