Ingredients

  • Salt - 1/4 teaspoon
  • Tapioca starch - 1 tablespoon
  • Sesame seeds - 1 tablespoon (for topping)
  • Banana leaves (or parchment paper) - for lining

Steps

  1. Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
  2. Drain the soaked rice and steam it in a steamer lined with banana leaves or parchment paper for about 30 minutes, until tender.
  3. While the rice is steaming, combine coconut milk, sugar, salt, and tapioca starch in a saucepan over medium heat. Stir until the mixture thickens slightly and is well combined, about 5-7 minutes.
  4. Once the rice is cooked, transfer it to a mixing bowl and gradually add the coconut mixture, stirring well to combine until the rice is evenly coated.
  5. Pour the sticky rice mixture into a greased mold or a shallow dish lined with banana leaves, pressing it down gently to form an even layer.
  6. Sprinkle sesame seeds on top, then let it cool at room temperature for about 10 minutes.
  7. Cover and refrigerate for at least 30 minutes to set.
