  • Galangal - 1 inch piece, sliced
  • Kaffir lime leaves - 3, torn
  • Button mushrooms - 100 grams, sliced
  • Cherry tomatoes - 100 grams, halved
  • Fresh cilantro - 20 grams, chopped
  • Green onions - 2, sliced
  • Lime juice - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Salt - to taste
  • Chili flakes - to taste

Steps

  1. In a medium pot, combine the coconut milk and vegetable broth over medium heat.
  2. Add the chopped lemongrass, sliced galangal, and torn kaffir lime leaves to the pot.
  3. Bring the mixture to a gentle simmer and let it cook for about 10 minutes to infuse the flavors.
