Ingredients

  • Whole wheat pizza dough - 200 grams
  • Shrimp, peeled and deveined - 200 grams
  • Coconut milk - 100 ml
  • Shredded coconut - 30 grams
  • Thai red curry paste - 1 tablespoon
  • Mozzarella cheese, shredded - 100 grams
  • Red bell pepper, sliced - 1 medium
  • Green onions, chopped - 2 stalks
  • Fresh cilantro, chopped - 2 tablespoons
  • Lime, juiced - 1 medium
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a bowl, mix the shrimp with olive oil, Thai red curry paste, lime juice, salt, and black pepper. Let marinate for 10 minutes.
  3. Roll out the whole wheat pizza dough on a floured surface to your desired thickness.
