  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - for garnish

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped shallot and minced garlic, sautéing until fragrant and the shallot is translucent, about 3 minutes.
  3. Add the drained jasmine rice to the saucepan, stirring to coat the rice with the oil, shallots, and garlic for about 1 minute.
  4. Pour in the coconut milk and vegetable broth, then add the salt and black pepper. Stir well and bring the mixture to a gentle simmer.
  5. Once simmering, reduce the heat to low, cover the saucepan, and let it cook for 15 minutes until the rice absorbs the liquid.
  6. After 15 minutes, remove the lid and add the green peas, folding them gently into the rice. Cover again and let it cook for an additional 5 minutes.
  7. Remove from heat and let it sit covered for another 5 minutes. Fluff the rice with a fork.
