Ingredients
- Glutinous rice - 100 grams
- Coconut milk - 150 ml
- Sugar - 30 grams
- Salt - 1/4 teaspoon
- Grated coconut (unsweetened) - 50 grams
- Banana leaves or parchment paper - for wrapping
Steps
- Soak the glutinous rice in water for at least 4 hours, or overnight for best results.
- Drain the soaked rice and steam it in a steamer basket lined with banana leaves or parchment paper for about 20 minutes, until cooked and slightly sticky.
- In a small saucepan, combine the coconut milk, sugar, and salt. Heat gently until the sugar dissolves, but do not boil.
- Once the rice is cooked, transfer it to a mixing bowl and pour half of the sweetened coconut milk over the rice. Mix well and let it sit for about 10 minutes to absorb the flavor.
- Prepare small dumplings by taking a spoonful of the rice mixture and shaping it into a ball. Repeat until all the rice is used.
- Roll each dumpling in the grated coconut until fully coated.
- Serve the dumplings warm or at room temperature, drizzled with the remaining sweetened coconut milk.
