Ingredients

  • Jasmine rice - 1 cup
  • Coconut milk - 200 ml
  • Fresh coriander - 2 tablespoons, chopped
  • Green onion - 2, finely sliced
  • Red chili - 1, finely chopped
  • Lime zest - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cornstarch - 2 tablespoons
  • Vegetable oil - 2 tablespoons (for frying)
  • Burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Cucumber - 1/2, sliced
  • Thai sweet chili sauce - 2 tablespoons

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, combine the rinsed rice and coconut milk, and bring to a boil.
  3. Reduce heat to low, cover, and simmer for 15-18 minutes, or until the rice is cooked and the liquid is absorbed. Remove from heat and let it cool slightly.
  4. In a large mixing bowl, combine the cooked rice, chopped coriander, green onion, red chili, lime zest, salt, black pepper, and cornstarch. Mix well until everything is combined.
  5. Divide the rice mixture into two equal portions and shape each portion into a patty.
  6. Heat vegetable oil in a frying pan over medium heat. Once hot, carefully place the rice patties in the pan and fry for 4-5 minutes on each side, or until golden brown and crispy.
  7. While the patties are frying, prepare the burger buns by lightly toasting them if desired.
  8. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by a rice patty, sliced tomato, cucumber, and a drizzle of Thai sweet chili sauce. Top with the other half of the bun.
