- Jasmine rice - 1 cup
- Coconut milk - 200 ml
- Fresh coriander - 2 tablespoons, chopped
- Green onion - 2, finely sliced
- Red chili - 1, finely chopped
- Lime zest - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cornstarch - 2 tablespoons
- Vegetable oil - 2 tablespoons (for frying)
- Burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Cucumber - 1/2, sliced
- Thai sweet chili sauce - 2 tablespoons
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a medium saucepan, combine the rinsed rice and coconut milk, and bring to a boil.
- Reduce heat to low, cover, and simmer for 15-18 minutes, or until the rice is cooked and the liquid is absorbed. Remove from heat and let it cool slightly.
- In a large mixing bowl, combine the cooked rice, chopped coriander, green onion, red chili, lime zest, salt, black pepper, and cornstarch. Mix well until everything is combined.
- Divide the rice mixture into two equal portions and shape each portion into a patty.
- Heat vegetable oil in a frying pan over medium heat. Once hot, carefully place the rice patties in the pan and fry for 4-5 minutes on each side, or until golden brown and crispy.
- While the patties are frying, prepare the burger buns by lightly toasting them if desired.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by a rice patty, sliced tomato, cucumber, and a drizzle of Thai sweet chili sauce. Top with the other half of the bun.
